Baking Bliss

Last weekend I had a little bake-a-thon and I thought I would share the results! I was inspired to kick my butt into gear by my cousin Erin who posted some beautiful photos of her baking on facebook for her business start up called Naughty Biscotti. (This is her personal page, which is all she has for now but I will definitely post again with her webpage when she gets it up! Look out world, girl's got some skills!) Some of my experiments were tastier than others (the desserts OBVOIUSLY :D ). I created a muffin recipe that I will be writing down and keeping for sure, and tried one out for pie crust that I will be bookmarking because it was super delish! I can't wait to try more fillings out with these mini pie crusts. The egg tarts looked really lovely, but I need to tweak them a bit. A.K.A. add more cheese. Cheese makes everything better ;) So here are the fruits of my efforts. A cinnamon peach sweet potato muffin with oat crumble on top (my mom likes to call it my fruit root muffin. P.S. They are gluten free!), Mini apple pies with cream cheese crust, and spinach and cheese egg tarts with whole wheat filo dough. I was so excited to find whole wheat filo. I didn't know it existed! Clearly I haven't been exploring the world of groceries enough lately.
This weekend I visited my cousins in Ottawa and made some more delicious treats so stay tuned! Can't get enough! :D
